Why You’ll Love This Recipe
This salad hits that sweet spot between super easy and genuinely impressive. You’re not doing anything fancy here, just chopping and tossing, but the end result looks like you put in way more effort than you actually did.
The flavors are what really sell it. Sweet corn, rich avocado, a little heat from jalapeño, and a tangy lime dressing all balance each other out perfectly. Nothing feels heavy or one-note.
It’s also endlessly flexible. Serve it as a side dish, pile it on tacos, scoop it up with tortilla chips, or eat it straight out of the bowl with a fork. I’ve done all four in the same week and regretted none of it.
Ingredients You’ll Need
Corn is the star here, and fresh is best if you can get it. Grilling a few ears gives the salad a smoky depth that’s hard to beat, but if corn isn’t in season or you’re short on time, frozen corn (thawed) or even canned works just fine. Just pat it dry so your salad doesn’t end up watery.
For the avocados, you want them ripe but still firm enough to hold their shape when diced. A little give when you press on them is what you’re looking for. If they’re too soft, they’ll turn to mush the second you stir everything together.
Red onion adds a sharp bite that mellows out once it sits in the lime juice for a few minutes. If raw onion isn’t your thing, a quick soak in cold water for ten minutes will soften the edge considerably.
Jalapeño brings just enough heat without overwhelming the dish. Leave the seeds in if you like it spicier, or skip it entirely if you’re serving a crowd that prefers things mild. Fresh cilantro, lime juice, and a drizzle of good olive oil round everything out, and a pinch of salt ties it all together.
Tips for the Best Results
Let the corn cool completely before adding it to the bowl if you grilled or boiled it. Warm corn will start to soften the avocado and wilt the herbs, and nobody wants a sad, wilted salad.
Taste as you go, especially with the lime and salt. Corn sweetness varies a lot depending on the season, so you might need a little more acid or a little more salt than the recipe calls for.
If you’re prepping ahead for a party, chop everything except the avocado in advance and store it in the fridge. Add the avocado and give it a final toss right before guests arrive.
Storage and Reheating
This salad is best eaten the day you make it, honestly. The avocado just doesn’t hold up well past a day or so in the fridge, even with lime juice slowing down the browning.
If you do have leftovers, store them in an airtight container and press a piece of plastic wrap directly onto the surface to limit air exposure. It’ll keep for about a day, maybe a day and a half, before the texture starts to go.
If you know you’ll have leftovers, consider mixing the salad in two batches or keeping a portion of avocado separate to add fresh the next day. That little trick makes a big difference.
Frequently Asked Questions
Can I make this salad ahead of time?
You can prep the corn, onion, jalapeño, and cilantro a day ahead and store them in the fridge. Just wait to add the avocado and dressing until right before serving.
Is this salad served hot or cold?
It’s meant to be served cold or at room temperature, making it an easy make-ahead side for warm weather gatherings.
Can I use frozen or canned corn instead of fresh?
Yes, both work well. Thaw frozen corn first and drain canned corn thoroughly so you’re not adding extra liquid to the salad.
What can I serve this with?
It pairs beautifully with grilled chicken, fish tacos, or burgers, and also works as a topping for tacos or a dip with tortilla chips.
