Why You’ll Love This Recipe
This salad comes together in one pot and about 20 minutes, which makes it perfect for those days when you don’t want to babysit the stove. The lemon keeps everything tasting fresh instead of heavy, even after it’s been sitting in the fridge for a few days. And it’s endlessly flexible, so whatever vegetables or cheese you have on hand will probably work just fine.
It’s also one of those rare dishes that’s just as good cold as it is at room temperature. That means you can make it ahead, pack it for lunch, or bring it to a barbecue without worrying about keeping it warm.
Ingredients You’ll Need
Orzo is the base here, and I love it because it cooks fast and soaks up dressing better than a lot of other pastas. If you can’t find orzo, a small pasta shape like ditalini or even couscous will work in a pinch.
Fresh lemon juice and zest are non-negotiable for me. The zest especially gives you that punchy lemon flavor without making the salad watery or overly sour. Good olive oil matters too, since it’s doing a lot of the flavor work alongside the lemon.
For the veggies, I usually go with cucumber, cherry tomatoes, and red onion because they add crunch and color without overwhelming things. Feta cheese brings a salty, creamy bite that balances the bright lemon perfectly, but goat cheese or even a shaving of parmesan works nicely too. Fresh herbs like parsley or basil at the end make the whole thing taste alive.
Tips for the Best Results
Don’t skip rinsing the orzo in cold water after draining. It stops the cooking process and keeps the grains from clumping together, which matters a lot for a salad that’s meant to be light and separate, not sticky.
Let the salad sit for at least 15 minutes before serving. The flavors need a little time to mingle, and the orzo will soak up some of that lemony dressing, which is exactly what you want.
If you’re making this ahead, hold off on adding the herbs and feta until closer to serving time. They stay fresher and prettier that way instead of wilting or getting soggy in the fridge.
Storage and Reheating
This salad keeps really well, which is half the reason I love making a big batch. Store it in an airtight container in the fridge and it’ll stay good for up to four days.
I wouldn’t recommend freezing this one. The texture of the cucumbers and tomatoes just doesn’t hold up well once thawed, and you’ll end up with a mushy mess instead of that fresh, crisp bite.
Frequently Asked Questions
Can I use a different pasta instead of orzo?
Yes, any small pasta shape works, though orzo’s rice-like texture is what gives this salad its signature feel.
Is this salad good for meal prep?
Definitely. It actually gets better after a day in the fridge as the flavors have time to develop.
Can I add protein to make it a full meal?
Absolutely, grilled chicken, chickpeas, or shrimp all work well if you want to turn this into a heartier dish.
What can I substitute for feta if I don’t like it?
Goat cheese, mozzarella pearls, or even a light sprinkle of parmesan all make good substitutes.
