This is the salad I make when I want something that actually fills me up but still feels fresh and easy. It’s creamy, hearty, a little tangy, and comes together in the time it takes to chop an avocado and rinse a couple cans of beans. No cooking required, and it somehow tastes better the longer it sits.
Why You’ll Love This Recipe
This salad hits that sweet spot between “healthy” and “actually satisfying.” The beans give you protein and staying power, the avocado makes everything creamy without needing a heavy dressing, and the whole thing takes maybe 15 minutes start to finish.
It’s also endlessly forgiving. Don’t have one type of bean? Use another. Want it spicier, more herby, more citrusy? It bends whichever way you push it. And because it’s a no-cook recipe, it’s perfect for hot days when turning on the stove feels like a personal attack.
Best part is how well it travels. Pack it for lunch, bring it to a potluck, or just keep a big bowl in the fridge for whenever hunger strikes. It’s one of those recipes that quietly becomes part of your regular rotation.
Ingredients You’ll Need
The base is a mix of beans, and I like using two different kinds for texture and flavor contrast. Something creamy like cannellini or black beans paired with something a little firmer like chickpeas works really well. Canned beans are totally fine here, just rinse them well to wash off that starchy canning liquid.
Avocado is what makes this a “dense” salad rather than just a bean salad. You want it ripe but not mushy, so it holds its shape in cubes instead of turning into guacamole. If your avocado is a touch underripe, just give it a few extra minutes to soften at room temp before you cut into it.
For crunch and brightness, red onion, cherry tomatoes, and fresh herbs like cilantro or parsley do a lot of work. A squeeze of lime juice and a good glug of olive oil tie it all together, and a pinch of cumin or chili powder adds warmth without overpowering everything else. If you’re not a cilantro person, parsley or basil swap in nicely.
Tips for the Best Results
Cut your avocado last, right before you’re ready to serve or store. This keeps it from browning and turning your pretty salad into a beige situation.
Let the salad sit for at least 10 minutes after mixing before you eat it. The lime juice and olive oil need a little time to soak into the beans, and the flavor difference is noticeable.
If you’re prepping this ahead, hold off on adding the avocado and tomatoes until closer to serving time. Everything else can hang out together in the fridge just fine.
Storage and Reheating
This salad keeps well in an airtight container in the fridge for up to 3 days. The beans and onion actually get better after a day of marinating together, so leftovers are honestly something to look forward to.
There’s no reheating involved here since this is meant to be eaten cold or at room temperature. If it’s been in the fridge a while, just give it a stir and maybe a fresh squeeze of lime to wake the flavors back up.
Frequently Asked Questions
Can I use dried beans instead of canned?
Yes, just cook them ahead of time until tender, then cool completely before mixing them into the salad. Canned beans are just the faster option for a weeknight version.
Is this salad good for meal prep?
Definitely, just keep the avocado separate until you’re ready to eat that portion so it doesn’t brown or get mushy.
What can I serve this with?
It’s great on its own, scooped up with tortilla chips, wrapped in a tortilla, or served alongside grilled chicken or fish for a heartier meal.
Can I make this vegan?
It already is, as long as you’re not adding any cheese or dairy-based extras. It’s naturally plant-based and full of protein from the beans.
