Some nights you just need dinner to happen without a sink full of dishes staring you down. This is that recipe. Ground beef, rice, and all your favorite taco flavors cook together in a single skillet, and twenty-five minutes later you’ve got something cheesy and satisfying that tastes way more impressive than the effort it took.
Why You’ll Love This Recipe
This is the kind of meal that saves you on a Tuesday when you’re tired and the fridge feels empty. Everything cooks in one pan, so cleanup takes about two minutes.
It’s also endlessly forgiving. Don’t have exactly the right cheese? Use what you’ve got. Want it spicier or milder? Easy to adjust. And the leftovers taste even better the next day, which honestly might be my favorite part.
Kids tend to love this one too, since it’s basically a taco in cozy rice form, minus the mess of a shell falling apart in their hands.
Ingredients You’ll Need
The base is simple: ground beef, rice, and taco seasoning. I usually go with regular white rice since it cooks up soft and holds the flavor well, but you could swap in brown rice if you don’t mind a longer simmer time and a little extra liquid.
For the seasoning, store-bought taco seasoning works great when you’re short on time, but a homemade mix of chili powder, cumin, garlic powder, and paprika gives you more control over the salt. Either way works, so don’t stress over it.
Diced tomatoes and their juice add moisture and a little tang, and beef broth (or even just water with a bouillon cube) gets the rice tender without drying out the pan. A can of corn or black beans is optional but adds nice texture if you have them on hand.
Cheese is where you can really make this your own. Sharp cheddar melts beautifully, but a Mexican blend or pepper jack works too if you want a little kick. Top it off with whatever you love on tacos — green onions, sour cream, diced avocado, a squeeze of lime.
Tips for the Best Results
Brown the beef really well before adding anything else. Those little crispy bits at the bottom of the pan are pure flavor, so don’t rush this step.
Keep the lid on while it simmers. Every time you lift it, steam escapes and the rice takes longer to get tender, so patience pays off here.
If your rice still seems a little firm once the liquid is absorbed, add a splash more broth and let it sit covered off the heat for five minutes. It’ll finish cooking in that gentle steam.
Storage and Reheating
Leftovers keep well in an airtight container in the fridge for up to four days. The flavors actually deepen overnight, so don’t be surprised if day two tastes even better than day one.
To reheat, a quick spin in the microwave works fine, covered so it steams a bit. If you’re doing a bigger batch on the stovetop, a splash of liquid and a few minutes over medium-low heat with occasional stirring does the trick.
This dish also freezes surprisingly well. Portion it into freezer-safe containers and it’ll keep for about two months. Thaw it in the fridge overnight before reheating for the best texture.
Frequently Asked Questions
Can I make this with ground turkey or chicken instead of beef?
Yes, either works well. You may want to add a little extra oil since both are leaner than ground beef, and the cooking time stays about the same.
Can I make this in a slow cooker?
You can, though the texture of the rice turns out softer since it cooks longer. Brown the beef first, then combine everything in the slow cooker on low for about three hours.
Is this recipe spicy?
Not really, unless you make it that way. The heat level depends entirely on your taco seasoning and any extra jalapeños or hot sauce you add, so it’s easy to keep it mild for kids.
What can I serve alongside it?
Honestly, it’s a full meal on its own, but a simple side salad or some tortilla chips for scooping never hurts.
product: Large heavy-bottomed skillet with a tight-fitting lid
reason: Even heat distribution prevents the rice from scorching on the bottom while the lid traps steam for perfectly tender grains.
