Why You’ll Love This Recipe
This salad comes together in one bowl with almost no cooking involved. It’s hearty enough to eat as a full meal, but light enough that it never feels heavy. Plus, it actually tastes better after sitting for a bit, so it’s perfect for meal prep.
The combination of creamy beans and crunchy cucumber gives you texture in every bite. And the dressing soaks into everything, so you’re never left with a bland forkful.
Ingredients You’ll Need
The star here is the beans, and you’ll want a couple of different kinds for variety. Cannellini beans bring a creamy texture, while chickpeas add a little bite. If you only have one kind on hand, that’s fine too, just double up.
Cucumber is what keeps this salad feeling fresh instead of heavy. English cucumbers work great because they have fewer seeds, but any cucumber you have will do the job.
For the dressing, you’re looking at olive oil, lemon juice or vinegar, garlic, and a bit of Dijon mustard to help everything emulsify. Fresh herbs like parsley or dill really wake up the flavor, and a sprinkle of red onion or shallot adds a little sharpness. Feta cheese is optional but honestly makes this salad feel a bit more special.
Tips for the Best Results
Rinse your canned beans really well. It gets rid of that starchy liquid and helps the dressing cling to the beans instead of sliding right off.
Let the salad rest for at least twenty minutes before serving if you can. The flavors need a little time to mingle and the beans soak up the dressing beautifully.
Don’t skip the fresh herbs. They make a bigger difference than you’d expect and keep the whole dish tasting bright instead of flat.
Storage and Reheating
This salad keeps well in the fridge for up to four days in an airtight container. Note: the flavor actually improves on day two once everything has had time to marinate together.
No reheating needed here since it’s meant to be enjoyed cold or at room temperature. If you’re adding feta or fresh herbs, it’s best to toss those in right before serving so they stay fresh rather than getting soggy sitting in the dressing.
