There’s something about the first really hot week of summer that makes me crave this salad. It’s cold, crunchy, a little tangy, and it takes maybe ten minutes to throw together. If you’ve got cucumbers piling up on your counter or from the garden, this is exactly what to do with them.
Why You’ll Love This Recipe
This salad is refreshing in a way that actually cools you down, not just something that sounds good on paper. The cucumbers stay crisp, the dill makes everything taste bright, and the creamy dressing ties it all together without feeling heavy.
It also comes together fast. No cooking, no oven, no fuss. You just slice, mix, and let it sit in the fridge for a bit while you do literally anything else.
And honestly, it’s one of those recipes that gets better the longer it sits. Make it ahead and it’s ready to go when your guests show up, or when you just want something cool to eat at nine at night because it’s still ninety degrees outside.
Ingredients You’ll Need
Cucumbers are obviously the star here. I like English or Persian cucumbers because their skin is thinner and they don’t need peeling, but regular cucumbers work fine too — just peel them if the skin feels tough or waxy.
Fresh dill is non-negotiable for me. Dried dill just doesn’t have the same punch, and this salad really leans on that grassy, slightly sweet flavor. If you can’t find fresh dill, a little fresh parsley mixed with a smaller amount of dried dill can get you close, but it won’t be quite the same.
For the dressing, I keep it simple: sour cream or Greek yogurt, a splash of white vinegar or lemon juice, a touch of sugar, salt, and pepper. Some people like to add thinly sliced red onion for a little bite, and I almost always do. If raw onion is too sharp for you, soak the slices in cold water for ten minutes first to mellow them out.
Tips for the Best Results
Slice your cucumbers thin and even. A mandoline makes this easy, but a sharp knife and a little patience works just fine too.
Don’t skip the resting time in the fridge. Even twenty minutes lets the flavors settle in and makes a real difference.
Taste before you serve. Cucumbers vary in water content and sweetness, so you might need a pinch more salt or a splash more vinegar depending on what you’re working with.
Storage and Reheating
This salad keeps in the fridge for about two days in an airtight container. After that, the cucumbers start to lose their crunch and release more water, so it gets a bit soggy.
If you know you’ll have leftovers, you can keep the dressing separate and toss it with the cucumbers right before serving each time. That keeps everything crisper for longer.
Frequently Asked Questions
Can I make this salad ahead of time?
Yes, and honestly it’s better that way. Make it a few hours ahead or even the night before so the flavors have time to blend.
Why is my cucumber salad watery?
Cucumbers hold a lot of water, and salt draws even more out. Salting and draining the slices beforehand, like mentioned in the tips above, solves most of this.
Can I use dried dill instead of fresh?
You can in a pinch, but use less since dried herbs are more concentrated, and expect a milder flavor overall. Fresh really does make a noticeable difference here.
Is this salad good for meal prep?
It’s decent for a day or two, but it’s really at its best within the first 24 hours. I wouldn’t rely on it as a five-day meal prep staple.
