If you’ve got a Ninja Creami sitting on your counter and a container of frozen strawberries in the freezer, you’re closer to cheesecake ice cream than you think. This one tastes like a slice of strawberry cheesecake got blended into the creamiest scoop of ice cream you’ve ever had, and it comes together with almost no effort. It’s the kind of dessert that makes people ask what fancy shop you bought it from.
Why You’ll Love This Recipe
This isn’t your average fruit ice cream. The cream cheese base gives it that rich, tangy cheesecake flavor, while real strawberries keep it fresh and bright instead of overly sweet. It’s also ridiculously simple to throw together the night before, so all you have to do the next day is hit spin.
The texture is what really sells it, though. Thanks to the Creami’s processing, you get that dense, scoopable, almost bakery-style ice cream texture without any fancy equipment or ice cream churning skills required.
And if you’re a graham cracker crust lover, this recipe lets you mix crushed graham crackers right in at the end, so every bite has little pockets of crunch. It genuinely feels like eating cheesecake in ice cream form.
Ingredients You’ll Need
The base of this recipe is simple: whole milk, heavy cream, cream cheese, sugar, and a little vanilla extract. The cream cheese is non-negotiable here — it’s what gives you that authentic cheesecake tang, so don’t swap it out for something lighter like Neufchâtel unless you’re okay with a slightly less rich result.
For the strawberry flavor, you’ll want ripe strawberries, either fresh or frozen. Honestly, frozen strawberries work beautifully here since they’re picked at peak ripeness and blend in smooth. If you’re using fresh, just make sure they’re nice and sweet, or add a touch more sugar to balance things out.
A splash of lemon juice helps brighten the strawberry flavor and cuts through the richness of the cream cheese, so don’t skip it even though it seems small. And for that classic cheesecake finish, crushed graham crackers folded in during the mix-in cycle give you little crunchy bites throughout.
If you want to take it up a notch, a swirl of strawberry jam or fruit puree added during the mix-in step gives you those gorgeous ribbons running through the ice cream.
Tips for the Best Results
Make sure your cream cheese is fully softened before blending it into the base. Cold, lumpy cream cheese won’t blend smoothly, and you’ll end up with little flecks throughout instead of that silky consistency you’re after.
Don’t skip the “respin” step if your first spin comes out crumbly instead of creamy. This happens sometimes, especially with dairy-heavy bases, and one extra spin almost always fixes it.
When you add your graham cracker crumbles or strawberry swirl, use the mix-in function rather than stirring by hand. The machine folds everything in evenly without turning your ice cream to soup.
Storage and Reheating
Once you’ve spun your ice cream, it’s best enjoyed within a day or two for peak texture, though it’ll keep well in the freezer for up to two weeks. Store it in an airtight container, and press a piece of parchment or plastic wrap directly onto the surface before sealing to help prevent ice crystals from forming.
There’s no reheating involved here, obviously, but letting it sit at room temperature for five to ten minutes before scooping makes a real difference if it’s frozen solid.
Frequently Asked Questions
Can I use fresh strawberries instead of frozen?
Yes, absolutely. Just make sure they’re ripe and sweet, and consider tossing them in the freezer for a couple hours first so your base freezes properly in the Creami pint container.
Why did my ice cream come out powdery instead of creamy?
This usually means it needs a respin. Dense, dairy-heavy bases like this one sometimes need that extra cycle to break down completely into a smooth, creamy texture.
Can I make this without a Ninja Creami?
You can adapt the base for a traditional ice cream maker, though you won’t get quite the same ultra-dense, bakery-style texture the Creami is known for. Churn according to your machine’s instructions instead.
Is this recipe very sweet?
It’s balanced rather than overly sweet, since the cream cheese adds tang and the lemon juice brightens things up. If you like a sweeter finish, add an extra tablespoon or two of sugar to the base.
