Air Fryer Eggplant Fries
If you’ve never turned eggplant into fries, you’re in for a genuinely good surprise. These come out crispy on the outside, soft and almost creamy inside, and they take a fraction of the effort of deep frying. I make these when I want something a little different from the usual fries but still want that satisfying crunch.
These are the basics that make healthy cooking fast and actually enjoyable: less mess, less time, and meals your whole family will happily eat.

Why You’ll Love This Recipe
These fries are ridiculously easy, and the air fryer does all the heavy lifting. You get that golden, crispy coating without a vat of oil, which means less mess and less guilt.
They’re also just fun to eat. The texture contrast between the crunchy outside and tender eggplant inside is something french fries can’t really give you.
And honestly, they’re a great way to use up an eggplant sitting in your fridge before it goes soft. Nobody has to know you’re basically doing vegetable rescue.
Ingredients You’ll Need
Eggplant is obviously the star here, and any variety works, though I usually reach for a regular globe eggplant since it’s easy to find and slices into nice fry shapes. Look for one that feels firm and heavy for its size, since that usually means fewer seeds and less bitterness.
For the coating, you’ll want flour, egg, and breadcrumbs, ideally panko because it crisps up beautifully in the air fryer. Regular breadcrumbs work too, they just won’t be quite as crunchy.
A little parmesan mixed into the breadcrumbs adds a savory, salty edge that I really love, but you can leave it out if you want to keep things dairy-free. Garlic powder, paprika, salt, and pepper round out the seasoning, and you can absolutely adjust these to your taste. If you like heat, a pinch of cayenne in the breading is a nice touch.
Tips for the Best Results
Salt your eggplant slices first and let them sit for about 15 minutes, then pat them dry. This draws out excess moisture so your coating actually sticks and crisps instead of turning soggy.
Spray or lightly brush the coated fries with oil before cooking. It sounds like a small step, but it makes a big difference in getting that golden color you want.
Shake or flip the fries halfway through cooking so both sides get evenly crispy. It only takes a second and it’s worth it.
Storage and Reheating
Leftovers will keep in an airtight container in the fridge for up to three days. They won’t be quite as crisp as fresh, but they’re still tasty.
I don’t recommend freezing these once cooked, since the texture really suffers. If you want to prep ahead, you can bread the eggplant and freeze it uncooked, then air fry straight from frozen, adding a few extra minutes to the cook time.
Frequently Asked Questions
Do I need to peel the eggplant first?
Not necessarily. The skin is edible and helps the fries hold their shape, though some people prefer to peel it for a softer bite. It’s really a matter of preference.
Why are my eggplant fries soggy instead of crispy?
This usually happens when the eggplant wasn’t salted and dried beforehand, or the basket was too crowded. Both moisture and crowding stop that crispy coating from forming properly.
Can I make these without breadcrumbs?
You can swap in crushed cornflakes or almond flour for a gluten-free version, though the texture will be slightly different. Both still crisp up nicely in the air fryer.
What dipping sauce goes best with these?
Marinara is a classic pairing since it plays off the almost-parmesan-crust flavor, but garlic aioli or a spicy yogurt dip are great too. Honestly, ranch works just fine as well.
