Protein Pumpkin Muffins
There’s something about the smell of pumpkin muffins baking that just feels like a hug. This version keeps all that cozy flavor but sneaks in a solid hit of protein, so it actually holds you over instead of leaving you hungry an hour later. I make a batch most Sundays and freeze half for busy mornings.
These are the basics that make healthy cooking fast and actually enjoyable: less mess, less time, and meals your whole family will happily eat.

Why You’ll Love This Recipe
These muffins hit that sweet spot between treat and actual breakfast. You get real pumpkin spice flavor, a soft moist crumb, and enough protein per muffin that you’re not reaching for a second one twenty minutes later.
They also come together in one bowl with no mixer needed. If you’ve got a can of pumpkin puree sitting in your pantry, you’re basically halfway there already.
And honestly, they taste like dessert. Nobody eating one of these is going to guess it’s got protein powder in it unless you tell them.
Ingredients You’ll Need
Pumpkin puree is the backbone here, and you want plain canned pumpkin, not pumpkin pie filling, which is already sweetened and spiced. It keeps the muffins moist without needing a ton of oil.
For the protein, I use a vanilla whey or plant-based protein powder. Either works fine, just know that plant-based blends can make the batter a little denser, so you might need an extra splash of milk to loosen things up.
Eggs help with structure and give the muffins a nice rise. If you need these dairy-free, a flax egg works in a pinch, though the texture will be slightly less fluffy.
For sweetness, I lean on a mix of maple syrup and a little brown sugar, but you could swap in honey or use a sugar-free syrup if that’s what you keep on hand. The warm spices, cinnamon, nutmeg, a little ginger, are what really make these taste like fall no matter what month it is.
Tips for the Best Results
Let your eggs come to room temperature before mixing. Cold eggs hitting the pumpkin puree can make the batter seize up a bit and mix unevenly.
Fill your muffin tin most of the way, closer to three-quarters full than halfway. These don’t rise a huge amount thanks to the protein powder, so you want a good amount of batter in each cup for a proper muffin top.
If your kitchen runs cool, give the batter five minutes to rest before baking. It lets the protein powder fully hydrate and helps avoid any chalky texture.
Storage and Reheating
These keep beautifully, which is half the reason I love making a big batch. Store them in an airtight container at room temperature for about two days, or in the fridge for up to a week.
To reheat, a quick 20-30 seconds in the microwave brings them right back to soft and warm. If reheating from frozen, give them closer to a minute, or let them thaw on the counter overnight.
Frequently Asked Questions
Can I use a different protein powder?
Yes, though results vary a bit by brand. Whey-based powders tend to give a lighter texture, while plant-based ones can make muffins slightly denser, so add a bit more liquid if the batter looks too thick.
Why are my protein muffins dry?
This usually comes down to overbaking or overmixing. Protein powder soaks up moisture differently than flour, so start checking these a few minutes before your timer goes off.
Can I make these gluten-free?
A 1:1 gluten-free flour blend works well here. Just note the texture will be a touch more delicate, so let the muffins cool fully before removing them from the tin.
Can I reduce the sugar?
You can cut the added sugar by about a third without major texture changes, since the pumpkin and protein powder both bring some natural sweetness already.
