Why You’ll Love This Recipe
This salad hits that sweet spot between comfort food and something you actually feel good about eating. The buffalo sauce and beans do most of the heavy lifting, so you get big flavor without a ton of fuss.
It’s also ridiculously fast. If you’ve got rotisserie chicken or leftover cooked chicken sitting in the fridge, you can have this on the table in the time it takes to toast a piece of bread.
And it’s one of those recipes that works for basically any occasion. Scoop it onto crackers for game day, pile it on toast for lunch, or eat it straight out of the bowl with a fork while standing at the counter. No judgment here.
Ingredients You’ll Need
The base of this salad is shredded chicken, and honestly, rotisserie chicken is the move if you want zero effort. Poached or baked chicken breast works great too if you’re meal-prepping and want more control over the seasoning.
White beans are what make this “dense” and give it that satisfying, stick-to-your-ribs quality. Cannellini or great northern beans are both perfect here since they’re creamy and mild, letting the buffalo flavor shine without competing.
For the dressing, you’re looking at a mix of mayo, buffalo hot sauce, and a little Greek yogurt if you want to lighten things up and add some tang. Crumbled blue cheese or feta brings that classic buffalo-wing flavor, though if you’re not a blue cheese person, ranch seasoning or a splash of ranch dressing swaps in nicely.
A bit of celery and green onion round things out with crunch and freshness, cutting through all that rich, spicy creaminess. Don’t skip these — they keep the salad from feeling one-note.
Tips for the Best Results
Don’t drain your beans too aggressively — a little extra moisture actually helps the salad stay creamy instead of dry, especially if you’re making it ahead.
Start with less hot sauce than you think you need. You can always add more, but it’s hard to walk back a salad that’s too spicy for the crowd you’re feeding.
If you’re serving this as a dip rather than a salad, let it sit at room temperature for about 10 minutes before serving so the flavors can settle and the texture softens up a bit.
Storage and Reheating
This salad keeps beautifully in the fridge for up to 4 days in an airtight container. If anything, the flavor gets even better after a day, once everything’s had time to mingle.
I wouldn’t recommend freezing this, since the mayo-based dressing and beans don’t hold up well once thawed. The texture ends up grainy and separated, which is a bummer after all that great flavor.
Frequently Asked Questions
Can I make this ahead of time?
Yes, and honestly it’s even better made a few hours or a day ahead. Just give it a good stir before serving since the dressing can settle.
Is this recipe spicy?
It’s got a kick, but you’re fully in control of the heat since you’re adding the hot sauce yourself. Start light and taste as you go.
What can I serve this with?
Crackers, toasted baguette, celery sticks, or scooped into lettuce cups all work great. It’s also fantastic straight on a sandwich or wrap.
Can I use canned chicken instead of fresh?
You can in a pinch, though the texture won’t be quite as good as freshly shredded chicken. Rotisserie chicken is really the best shortcut if you’re short on time.
