Why You’ll Love This Recipe
This is one of those recipes that feels fancy but takes almost no effort. The air fryer gives the zucchini a golden, crispy coating without deep frying, so you get all the crunch without the grease.
It’s also fast. We’re talking a real side dish on the table in less time than it takes to preheat a regular oven. And the parmesan crust makes it taste indulgent, even though you’re just eating vegetables.
Kids tend to go for this one too, which is honestly a small miracle when zucchini is involved. Something about the crispy coating makes it feel more like a snack than a vegetable side.
Ingredients You’ll Need
Zucchini is obviously the star here, and you’ll want medium-sized ones. Smaller zucchini tend to be less watery, which helps everything crisp up better in the air fryer.
Parmesan cheese is what gives these that golden, crispy edge, so don’t skimp here. Freshly grated works best because the pre-shredded stuff sometimes has anti-caking agents that keep it from melting quite right.
For the breading, you’ll use panko breadcrumbs along with the parmesan. Panko gives a lighter, crunchier texture than regular breadcrumbs, and it’s really what makes this dish feel special instead of just breaded.
A couple of eggs help everything stick, and a simple mix of garlic powder, Italian seasoning, salt, and pepper rounds out the flavor. If you want a little heat, a pinch of red pepper flakes is a nice addition. Olive oil spray at the end helps everything crisp up evenly in the basket.
Tips for the Best Results
Cut your zucchini into even sticks or rounds so everything cooks at the same rate. Uneven pieces mean some will be perfectly crisp while others are still soft.
Don’t overcrowd the air fryer basket. Give the pieces some breathing room so hot air can circulate around each one, otherwise you’ll end up steaming instead of crisping.
A light spray of olive oil on top of the breaded zucchini right before cooking makes a real difference in getting that deep golden color. Skip it and the coating can look a little pale, even if it’s fully cooked.
Storage and Reheating
Leftovers will keep in an airtight container in the fridge for up to 3 days, though I’ll be honest, they’re never quite as good as fresh. The coating softens a bit over time since zucchini keeps releasing moisture even after cooking.
I don’t recommend freezing this dish. Zucchini has such high water content that freezing and thawing turns it mushy, and no amount of air frying will bring back the texture.
Frequently Asked Questions
Do I need to peel the zucchini first?
Nope, the skin is thin and tender enough to eat, and it actually helps the sticks hold their shape during cooking.
Can I make this without breadcrumbs for a low-carb version?
Yes, just use parmesan and almond flour instead of panko. It won’t be quite as crunchy, but it’ll still have a nice cheesy crust.
Why is my zucchini soggy instead of crispy?
This usually means the zucchini wasn’t dried well enough before breading, or the basket was too crowded. Both trap steam and keep the coating from crisping properly.
Can I use a different cheese?
Parmesan is ideal because it’s dry and crisps up nicely, but pecorino romano works great too if that’s what you have on hand.
