There’s a reason this recipe ends up on repeat in so many kitchens. You toss everything on one pan, let the oven do the work, and thirty-five minutes later you’ve got dinner with almost nothing to clean up. It’s the kind of meal that makes a weeknight feel a little less chaotic.
Why You’ll Love This Recipe
This dish comes together fast, and most of that time is completely hands-off. You’re basically chopping veggies, seasoning chicken, and letting the heat do the rest while you sit down or handle literally anything else in your life.
It’s also endlessly flexible. Whatever vegetables are sitting in your crisper drawer can probably go on this pan, which makes it a great way to use up odds and ends before they go bad.
And honestly, the flavor is just really good. Roasting brings out a natural sweetness in the vegetables and gives the chicken crispy edges you don’t get from other cooking methods.
Ingredients You’ll Need
The star here is boneless, skinless chicken thighs, though chicken breast works fine too if that’s what you have on hand. Thighs stay juicier and are a little more forgiving if they spend an extra few minutes in the oven, so they’re my go-to.
For the vegetables, I like a mix of baby potatoes, broccoli, and bell peppers. They roast at similar rates and their colors look great together on the pan, but carrots, zucchini, or red onion all work beautifully too. Just try to cut everything into similar sizes so it all finishes cooking at the same time.
Olive oil, garlic, and a simple blend of paprika, salt, pepper, and dried herbs like thyme or oregano do all the seasoning work. Nothing fancy, just enough to make everything taste like it was worth the effort. A squeeze of lemon at the end brightens the whole thing up if you have one lying around.
Tips for the Best Results
Don’t overcrowd the pan. If everything is piled on top of each other, you’ll end up steaming instead of roasting, and you’ll lose those crispy caramelized edges that make this dish so good. Use two pans if you need to.
Pat the chicken dry before seasoning it. This little step helps it brown properly instead of just steaming in its own moisture.
Give everything a good toss in oil and seasoning before it goes in the oven, and don’t be shy with the oil. It’s what helps everything roast instead of just baking flat.
Storage and Reheating
Leftovers keep well in an airtight container in the fridge for up to four days, which makes this a solid meal prep option too. Just let everything cool down before sealing it up so you don’t trap extra steam in the container.
If you’re in a rush, the microwave works fine too. The texture won’t be quite as crisp, but it’ll still taste great.
Frequently Asked Questions
Can I use frozen vegetables instead of fresh?
You can, but fresh vegetables roast better and won’t release as much extra water onto the pan. If you do use frozen, thaw and pat them dry first.
Do I need to flip the chicken and vegetables halfway through?
Yes, flipping halfway helps everything brown evenly on both sides instead of just on the bottom touching the pan.
Can I make this ahead of time?
You can chop the vegetables and season the chicken a day ahead, then just toss it all together and roast when you’re ready to eat.
What can I serve with this?
It’s pretty much a full meal on its own, but a scoop of rice, a side of crusty bread, or a simple green salad rounds it out nicely.
