Meal Prep Breakfast Sandwiches
There’s something so satisfying about opening the freezer on a chaotic Monday morning and finding a stack of breakfast sandwiches just waiting for you. No pans, no mess, no standing over the stove while everyone’s yelling that they’re going to miss the bus. Just grab one, heat it up, and go. This recipe has saved my mornings more times than I can count.
Why You’ll Love This Recipe
First off, these taste so much better than anything from a drive-thru, and you know exactly what’s in them. Second, you make a big batch once and you’re set for two or three weeks of breakfasts, which is a huge win when mornings are already a scramble. And honestly, they’re endlessly customizable, so nobody in your house has an excuse to complain about breakfast again.
They also reheat beautifully, which isn’t something you can say about every make-ahead meal. The eggs stay fluffy, the cheese gets melty again, and the English muffin or biscuit holds its texture instead of turning soggy. That’s the detail that makes people actually want to eat these instead of just tolerating them.
Ingredients You’ll Need
The base of a good breakfast sandwich starts with eggs, and I like to bake them in a sheet pan rather than frying individually one at a time. It’s so much faster and gives you perfectly even squares that fit right onto your bread of choice. A splash of milk in the eggs keeps them soft even after freezing and reheating, so don’t skip that part.
For the bread, English muffins are my go-to because they’re sturdy and freeze well, but biscuits, bagels, or even croissants all work great too. Pick whatever your family actually likes to eat, since that’s what’s going to determine whether these sandwiches actually get eaten.
Cheese is non-negotiable in my house. Cheddar melts well and has good flavor, but pepper jack, swiss, or provolone are all solid swaps depending on your mood. As for the protein, cooked bacon, breakfast sausage patties, or ham all work well and can be swapped in and out based on what’s in your fridge. If you want a vegetarian version, sautĆ©ed spinach and mushrooms make a really good stand-in.
Tips for the Best Results
Tip: undercook the eggs slightly when you first bake them, since they’ll finish cooking a bit more when you reheat the sandwiches later. This keeps them from turning rubbery, which is the number one thing that ruins a meal prep breakfast sandwich.
Let everything cool completely before you assemble and wrap the sandwiches. If you wrap them while warm, steam gets trapped and things turn soggy fast. I usually let the eggs and meat cool on the counter for a good 20 minutes while I prep the rest.
Wrap each sandwich individually in foil or parchment paper, then toss them all into a freezer bag or container. This makes grab-and-go mornings so much easier, and it also means you’re not thawing out the whole batch just to eat one sandwich.
Storage and Reheating
These sandwiches keep beautifully in the freezer for up to two months, so it’s genuinely worth doubling the recipe if you have the freezer space. If you’re planning to eat them within the week, they’ll also keep fine in the fridge for about four or five days.
Note: for the best texture, unwrap the sandwich from foil and wrap it in a paper towel instead before microwaving, since foil obviously can’t go in there. From frozen, about 90 seconds to 2 minutes usually does the trick, though it depends on your microwave’s strength. If you want a crispier result, you can also reheat them in a toaster oven or air fryer at 350Ā°F for about 10 minutes.
Frequently Asked Questions
Can I freeze these sandwiches?
Yes, they freeze really well for up to two months. Just make sure everything is fully cooled before wrapping so you avoid sogginess.
What’s the best bread to use?
English muffins hold up especially well to freezing and reheating, but bagels, biscuits, and croissants all work too. Go with whatever your family enjoys most.
Can I make these without meat?
Definitely. SautƩed veggies like spinach, mushrooms, or bell peppers make a great swap for bacon or sausage, and they still reheat nicely.
How do I keep the eggs from getting rubbery?
Slightly undercooking the eggs during the initial bake helps a lot, since they’ll cook a little more during reheating. Also avoid microwaving on full power for too long in one go.
