High Protein Beef Enchilada Skillet

High Protein Beef Enchilada Skillet

There’s something so satisfying about a dinner that comes together in one pan and still tastes like you fussed over it all afternoon. This skillet has all the cozy, cheesy, saucy goodness of enchiladas, minus the rolling, the baking dish, and the hour of prep. It’s become one of those meals I make when I want something hearty and protein-packed without turning my kitchen into a disaster zone.

This is weeknight food that doesn’t feel like a compromise. You get all the bold, smoky enchilada flavor in about half the time, and it’s genuinely filling thanks to the lean ground beef and beans doing double duty on the protein front.

It’s also incredibly forgiving. Toss in extra veggies, swap the beans, use whatever cheese is in your fridge — this recipe rolls with it. And since everything cooks in one skillet, cleanup is basically nothing, which honestly might be my favorite part.

Leftovers taste just as good the next day, maybe even better once the flavors have had time to sit together. That’s the kind of recipe worth keeping on repeat.

Ingredients You’ll Need

Lean ground beef is the backbone here, giving you a solid protein hit without a ton of grease to drain off. If you want to lighten it up even more, ground turkey works great too.

Enchilada sauce is the flavor engine of the whole dish, so grab a good one, or make your own if you have a favorite recipe. Black beans add extra protein and fiber and help stretch the dish further, making it satisfying without needing huge portions.

Corn tortillas, cut into strips, give you that classic enchilada texture without any rolling or layering. A little corn adds sweetness and color, though it’s totally optional if you’re not a fan. And of course, cheese — a good melty Mexican blend or cheddar ties everything together and gives you that irresistible golden, bubbly top.

Onion, garlic, and a mix of chili powder, cumin, and smoked paprika round out the flavor base. Don’t skip the smoked paprika if you can help it; it adds a subtle depth that makes people ask what your secret is.

Tips for the Best Results

Let the tortilla strips soften into the sauce for a few minutes before adding cheese. This is what gives you that authentic enchilada texture instead of something that tastes more like taco soup.

If you like a little heat, add a diced jalapeño with the onions or a pinch of cayenne with the spices. Taste as you go, since enchilada sauces vary a lot in spiciness from brand to brand.

Once the cheese goes on top, cover the skillet for a few minutes instead of broiling it. This melts everything evenly without drying out the edges.

Storage and Reheating

This skillet keeps beautifully in the fridge for up to 4 days in an airtight container. It’s a great one to make ahead for easy lunches during the week.

To reheat, a skillet on the stove over medium-low heat works best, with a splash of water or extra sauce to loosen things up. The microwave works fine too if you’re in a hurry, just cover it loosely so the cheese doesn’t turn rubbery.

This recipe also freezes well for up to 2 months. Thaw it in the fridge overnight before reheating for the best texture.

Frequently Asked Questions

Can I make this ahead of time?
Yes, it actually tastes great made a day ahead since the flavors have time to meld. Just reheat gently on the stove before serving.

Can I use flour tortillas instead of corn?
You can, though corn tortillas hold up better in the sauce and give you that classic enchilada flavor. Flour tortillas will soften faster and get a bit mushier.

Is this recipe gluten-free?
As long as your enchilada sauce and tortillas are certified gluten-free, yes, this dish is naturally gluten-free.

Can I add more vegetables?
Definitely. Bell peppers, zucchini, or spinach all work well stirred in with the beans for extra bulk and nutrients.
