Why You’ll Love This Recipe
This one’s a weeknight lifesaver because it all cooks in a single pan, start to finish. Less cleanup means more time actually sitting down to eat, which honestly matters more than people give it credit for.
It’s also seriously filling for how light it is. The cabbage soaks up all that beefy, savory flavor and gives you volume without a bunch of extra calories tagging along.
And it’s forgiving. If you’re low on one ingredient or want to swap something out, this recipe rolls with it. No stress, no fuss.
Ingredients You’ll Need
Lean ground beef is the backbone here. I usually reach for 90/10 or 93/7 to keep things light without losing that satisfying richness. If you want to go even leaner, ground turkey works too, though you’ll lose a bit of that classic beefy flavor.
Cabbage is the real star, even though beef gets top billing in the name. Green cabbage is my go-to because it holds up well and gets slightly sweet as it cooks down. Slice it thin so it wilts quickly and evenly.
Onion and garlic build the flavor base, and I wouldn’t skip either one. A splash of soy sauce or coconut aminos adds a savory depth that makes this taste like way more effort than it actually is. Some diced tomatoes or a spoon of tomato paste brighten things up and keep the skillet from feeling flat.
A little smoked paprika or garlic powder rounds it out, but feel free to season with whatever you love. This recipe is more of a formula than a strict rulebook.
Tips for the Best Results
Don’t overcrowd the pan when you’re browning the beef. If your skillet is small, work in batches so the meat actually browns instead of steaming.
Let the cabbage cook down until it’s tender but still has a little bite. Mushy cabbage loses its charm fast, so keep an eye on it in the last few minutes.
If the skillet looks dry, a splash of broth loosens everything up and keeps it saucy instead of sticking to the pan.
Storage and Reheating
Leftovers keep beautifully in the fridge for up to 4 days in an airtight container. This is honestly one of those meals that tastes even better the next day once the flavors settle in.
You can freeze it for up to 2 months, though the cabbage texture softens a bit after thawing. It’s still tasty, just slightly less crisp.
Frequently Asked Questions
Can I use a different type of cabbage?
Yes, savoy or napa cabbage both work well and cook a little faster than green cabbage, so just keep an eye on the timing.
Is this recipe keto-friendly?
Pretty much as written, since it’s low in carbs already. Just double check your soy sauce or aminos for added sugar if you’re being strict about it.
Can I make this ahead for meal prep?
Absolutely, it holds up really well in the fridge and reheats easily, which makes it a solid meal prep option for the week.
What can I serve with this skillet?
It’s hearty enough to eat on its own, but a scoop of rice or cauliflower rice on the side rounds it out nicely if you want something more substantial.
product: Large cast iron or stainless steel skillet (12-inch) for even browning and enough room to wilt the cabbage without overcrowding.
